Delaware North’s Hospitality Services:

  • Parklands Café Restaurant (150 seats), serving breakfast, lunch, and dinner daily
  • The Lodge, a 100-bed accommodation facility for sports teams, leisure, and corporate guests
  • Meeting and function venues for events accommodating 10-250 guests

Key Responsibilities of the Head Chef:

  • Oversee culinary operations for the café, catering facilities, and office spaces
  • Lead, coach, and develop the culinary team
  • Manage and control the department’s budget and food costs
  • Purchase goods and produce in compliance with Delaware North’s procurement policies
  • Ensure all food is of the highest quality, prioritizing guest satisfaction
  • Manage labor costs for permanent and casual kitchen staff
  • Uphold on-site food safety standards and high food quality
  • Continuously develop and innovate the menu
  • Build strong relationships with internal and external stakeholders

Qualifications and Experience:

  • Experience in a similar role managing a large kitchen in a café-style venue
  • Preferred experience in functions and external catering
  • Expertise in menu setting and stock control
  • Minimum Certificate III in Commercial Cookery
  • Proficiency in business technology, including stock control systems, spreadsheets, and accounting systems
  • Excellent communication skills at all levels
  • Proven ability to lead and coach a high-performing, positive team
  • Availability to work on a 7-day rotational roster
  • Ability to start in July/Early August 2024
