Delaware North at Marvel Stadium have an exciting opening for two talented Sous Chefs to join our busy culinary team.

Delaware North is a market leader in the catering and hospitality industry with a portfolio spanning: sporting stadiums, airports, resources and mining village services, leisure and entertainment venues globally.

Marvel Stadium is one of Melbourne’s leading sports & entertainment venues with a capacity of 53,000 and regularly hosting several Australian Football League (AFL) teams, as well as A-League, cricket matches, concerts and special events and non-event-day functions.


About the roles:


We are looking for a Sous Chef with expertise in Modern Asian cuisine to oversee the restaurant Lee Ho Fook, one of Melbourne’s Good Food Guide “hatted” restaurants featuring stunning Chinese cuisine created by Victor Liong.

We have a second opportunity for a talented Sous Chef to take on a key role overseeing Celebrity Chef Adrian Richardson’s Gallery, a fine dining, modern Australian a-la-carte restaurant.

Both roles will also support the wider culinary operation and gain exposure to other areas across this busy operation.


Responsibilities include:

  • Oversee all aspects of culinary operations including high volume production
  • Delivery of event-day and non-event day catering.
  • Liase with suppliers
  • Set, implement, and review food service standards
  • Support with control of the department budget and food costs
  • Managing the performance and labour costs for all permanent and casual kitchen staff
  • Championing on-site food safety and HACCP accreditation.
  • Combining with other F&B arms to provide first-class dining to all customers.
  • Liaise with the Executive Chef and General Manager on menu, guest feedback and service issues


The successful candidate will have:

  • A successful track record of managing large-scale kitchen operations (venue/event experience will be highly regarded).
  • Experience in high end function or a la cart operations
  • Expertise in modern Asian cuisine will be highly regarded for one of these roles
  • Experience with menu setting and stock control.
  • Appropriate culinary qualifications
  • Competence in using business technology such as stock control systems, spreadsheets, accounting systems.
  • Excellent communication skills at all levels
  • Strong team management and leadership
